Trans Fatty Acids Increase Long term Risk of Heart Disease

A study involving 667 men aged 64 -84 over a ten year period found that consumption of trans fatty acids is positively associated with an increased risk of heart disease. This was despite the fact that trans fatty acid intake was reduced from 4.3 % to 1.9% of total energy intake over the ten year period. Clearly a small amount of trans fatty acids can have a significant effect. (Lancet 357, 746-751 (2001))

What are trans fatty acids? Fatty acids are the basic components of fats and oils. The molecules commonly exist in two forms - cis and trans - which describe their shape. The natural form is the cis shape - this is the shape that the body can use. When fats or oils are boiled, the shape changes to the trans shape - a form that the body cannot use as efficiently as the cis shape. Why are fatty acids important in the body? {\b0 Every cell has a wall around it called a cell membrane which are made mostly of phospholipids. Each phospholipid molecule is like a brick in a wall. In order to give the wall strength it each brick needs to be bound tightly to the bricks adjoining. If any of the bricks are the wrong shape, the wall will not be strong. Similarly, if any of the fatty acids making up the phospholipids are not the right shape, they will weaken the wall of the cell membrane, possibly resulting in chronic disease. How to avoid trans fatty acids : Avoid all fats and oils that have been boiled, especially those which have been boiled for long periods. Trans fatty acids are found in deep fried foods, margarines (due to heating in the manufacturing process) and to a lesser extent in shallow fried foods. If you must have fried food, use a small amount of olive oil and discard after use. Stir fry hint :Place a small amount of water in the wok then add olive oil. This will prevent the oil from getting too hot.
